Juniper provides the classic structure, while coriander, licorice root, and cardamom add warmth and spice. But it’s the native ingredients that truly set this gin apart—horopito contributes a peppery snap, koromiko lends a subtle herbal edge, and kohekohe brings an earthy depth that evokes damp forest floors and native bush after rain.
